Partner activity: Proeftuin Noordwijk is a concept that inspires Noordwijk chefs. The chefs are inspired by seasonal products grown locally. This principle harkens back to the 17th century, when people lived life by eating with the seasons for a healthy and energetic lifestyle. The dishes change seasonally.
Our contribution: The restaurants of Grand hotel Huis ter Duin are inspired by the experimental garden of Noordwijk. Ben van der Ark has composed a truffle gnocchi with mushrooms, celeriac, sauce of truffle and a crispy potato based on the seasonal products. He created this dish on behalf of Grand hotel Huis ter Duin and Breakers Beach House. Marcel van Lier, of Latour restaurant also worked very hard to put together a beautiful dish. He put together a dish of salsify, Jerusalem artichoke, vadouvan and macadamia nut.
